Cake "Napoleon"

Here is my recipe of the popular Russian cake "Napoleon" that is some kind of a variation of the Mille-feuille.

I compiled from different on-line recipes and from my mother. It took me one day to cook it but surprisingly it worked out well:

Preparing cream:

1st bowl:
* 200ml of creme (10-12%)
* 2 big spoons of floor
* 1 big spoon of Tipiak Tapioca (manioc in France)

Mix well.

2nd bowl:
* 400ml of creme (10-12%)
* 1 glass of sugar
* start boiling while mixing

Gradually pour cream from the 1st bowl
to the boiling cream from the 2nd bowl and mix continuously ...

Mix 3-4 minutes and then cool down under room temperature for an hour or so ...

3rd bowl:
Stir 300g of butter (first leave it at room temperature for a few hours to soften).
Gradually pour cream from bowl 2 and continuously mix.
Leave at room temperature for an hour or two ...


Preparing dough:


* 3 glasses of floor
* 250g of margarine
* cut margarine with knife in the bowl and mix well with the floor
* add 1 egg
* add 3 big spoons of natural yogurt
* mix everything with hands
* may add half tea-spoon of baking soda (add first a bit of vinegar and then remove it)

Preparing pancakes:

* divide dough in 7 pieces
* make thin round pancakes
* bake in the oven heated to 200C for 4-5 minutes
* cool down
* put 6 pancakes on top of each other with cream in between.
press them well. Break the last pancake and use it as a topping.

Cool in the fridge. It tastes better after 1 day.
